I just wanted to say thanks to everyone who listened to Nancy Addison and me last night on W4CY.
It was a great discussion briefly touching on: how I became vegan celiac, the connection between food and health, how to feed kids, alkalinity vs acidity and some strong opinions on what is being done to "food" these days. I expressed my dismay at people who spend a lot of money on "Organic" snack wells, cookies, meat, cheese and soda pop. Brave Souls: Cindy
I have 2 friends who have ventured into the vegan celiac detox world. They gave me permission to tell their stories.
Cindy has been battling kidney stones for over one year. We tease her that her pain tolerance level is at Ludicrous! She has been through 3 sessions to shock the stones into smaller bits. The doctors put a stint in and put her through 5 rounds of antibiotics for infection. Now that the stones are gone, she wanted to detox the antibiotics.
Brave girl, she started with a 3 day juice detox. (see below) And here's the fabulous part. She called me the very first day and told me she "peed like a race horse." This is amazing because, as you can imagine, having kidney stones for a year can restrict the kidneys. Actually, she has referred to herself as "the pathetic pee-er" for 10 years. So imagine the relief, and subsequent surge of energy you would feel after releasing the toxins normally stored in the kidneys.
On her third day of the juice fast she said she went all day without brain fog. For those of you unfamiliar with the term, brain fog is spacy-ness, forgetfulness and a feeling that you can't remember what you've done or where you're going. It is very disorienting and highly discouraging. She is elated to "get her brain back". In her words:

Congrat's Preggo!
So you're gonna be a Momma!!
What a joyous, strange, exciting, nauseating time this is for you! I know you want health for you and the baby above all else. Here are a few pieces of advice from a mother of 3. I'm sure it won't be the last advice you get during your pregnancy!1.) Eat Healthy foods - This is not a time to detox. This is a time to flood
your body with nutrients, enzymes, vitamins, fats, minerals and water. Eat broccoli, carrots and walnuts to help build baby's eyes and bones. Drink watermelon juice and distilled water to keep your kidney's clean and quicken baby's brain synapses. Eat huge amounts of long grain brown rice with Bragg's Liquid Aminos to satisfy every one's protein needs.
2.) Never drink alcohol or caffeine. It's time to go cold turkey. Every sip of alcohol or caffeine hurts the baby. Stop it.
3.) Start reading. You have huge decisions to make about vaccines. Don't stick your head in the sand and trust your pediatrician. Read-Read-Read. Make decisions right now about the MMR vaccine. Decide
what vaccinations you are going to give him/her right now and choose a doctor based on your decisions.
My advice is to breast feed for 1 year and never give him/her a vaccine until that year is up. Breast milk is THE MOST IMPORTANT food your body will ever consume. It is a miraculous concoction of immune building enzymes which determine your future health. Once the baby has had 1 year of immune building, go ahead and immune if you want to. But go slowly with the immunizations.

had to go to the pediatrician to get booster shots for college and a
newly required meningitis vaccine. When I called to make the
appointment they couldn't find her records. The nurse called back
and starchily informed me Markie had not been to the doctor in
6 years. I love sticking it to these people so I guffawed and said
"WOW - That's ONE healthy kid, eh??"
They were not amused. She drove herself to the doctor and I told
her not to get more than 2 shots. They wanted to give her 6!!!

4.) Speaking of breastfeeding: learn to drink water all day every day.
When your baby is born and you breastfeed, drink 8 oz per side.
Stopping to go to the kitchen and grab a huge glass of water in between
"sides" is the perfect time for daddy to do some burping!! (Not his own-silly!)
Here's the down and dirty about breast-feeding:
~The first 6 weeks feed the angel whenever he/she is hungry. Feed
them nothing but breast milk. No water, no fluoride or any other stupid
supplements. Wake your tired butt up and breastfeed.
~Week 5 you will start to see a pattern. Write it down. Junior
will probably start leveling off at feeding every 2-3 hours if you have been
diligent about eating vegetables, grains, beans, fruit and water, water, water.
~Eat a little too much. Every afternoon at 3pm fill a spelt tortilla with almond
butter, bananas and honey. Pull out the chips and salsa. Put hummus on
gluten free crackers and carrot sticks.
~Week 7 is trial by fire. Feed baby on the schedule the baby sets.
My girls fed naturally at 7am - 10am - 1pm - 4pm - 6pm - 8pm - 10pm.
Once I started to feed them on the hour, rain or shine, mall or home,
happy or sad, asleep or awake, they fell into step quickly
~Week 8 you might get some sleep:))
Walk, skip, jump, laugh, pray, decorate,
shop, call every family member and friend. Have a blast with this strange, magical, miraculous, physically exhausting stretch of a lifetime.

3-Day Detox
My sister and sister-in-law are doing a 3 day detox. My sister feels rotten. My sister-in-law is battling kidney stones. Both of them are fanatical once you get them started on something. Here's what they've been eating for the last 3 days. All of it requires buying fresh fruits and vegetables and running them through a good juicer. I have a $300 Champion Juicer but I also recommend a $99 Jack LaLayne from Bed Bath Beyond.
Both of them have amazing amounts of energy, high urination, a visible release of toxins and a welcome decrease of "brain fog". Stay tuned. They're like Mikey, they'll try anything!!

Rules of the Road
~I have noted when it is important to use organic produce. i.e. if the produce has a thin skin you will be digesting then try to find organic; conversely, if the fruit/vegetable has a thick skin you will be removing (lemons, oranges, watermelon, bananas) there is no need to buy organic.
~If you can’t find organic, buy local. If you can’t buy local, buy conventional. Eating a conventional apple is better than a nacho! Stick to the program.
~There is a food-combining rule applied to the order of juices in a given day. Each day starts out with water and lemon to clear the large intestine and colon. You proceed to fruit which must be digested by itself in the stomach. As the day progresses you move to vegetables and you end the day with the only cooked “food” – tea.
~A senna tea will help move the bowels quickly. Senna works overnight to encourage intestinal function. You should be able to easily eliminate the next morning. Be very careful not to use too much Senna as it will result in severe cramps.
~Red beets cause your poop and possibly urine to turn red. This is an excellent way to measure your metabolism: if you poop red the same day as eating the beets you have a fast metabolism. If you do not poop red till 3 days after eating beets you may need to be on the Detox for 3 more days in order to move all old putrefaction from your intestines and colon.
~Pay attention to the color of the fruit or vegetable. If the recipe calls for red grapes don’t substitute green. Vitamins and minerals are distributed in fruits and vegetables differently as exhibited by their color. This Detox provides the rainbow of vitamins and minerals available in nature as needed by your body.
~If you “cheat” and have a Latte or if you add this menu to your daily bagel/burger/pasta, you will help your body but will completely disable the Detox function. Your body will only Detox if this is the only food in your system.
~This series of foods will ultimately result in alkalinity of your system. You may measure alkalinity vs acidity with pH strips. Be careful to not misinterpret data along the detox: your body may be acidic when dumping huge amounts of old meat/cheese/preservatives through your large intestine and colon. You may decide to stay on the Detox until your alkaline levels return to normal: 7.1 – 7.5.

......but I eat healthy!!
You think you "eat healthy" but you are not losing weight or gaining energy.
So think again.
You might think you "eat healthy" because
- you eat chicken instead of beef
- you buy products that say "non fat", "organic", "healthy", "coke zero"
- you eat "whole grain" cereal and milk for breakfast
- you take vitamins
- you only drink 1-2 glasses of wine per night
Think again!
Define healthy as this: I eat in such a way that my digestive system is inundated
with enzyme rich foods which require no enzyme taxing on my liver or pancreas. I eat
in such a way as to alkalize my body, thereby reducing acidity. Eat in such a way that
your body eliminates - poops - twice a day.
Just take your current diet (not in the restrictive sense but diet as you currently
eat on a regular basis) and add vitamins and minerals. Your goal/success will be
measured in poop!
Breakfast
Yesterday - "natural" cereal and milk
Tomorrow - raw walnuts, organic raisins, wheat-free whole grain granola soaked in rice milk
for 15 minutes. This softens the raw walnuts. You have eliminated white flour typically found in
all cereal regardless of marketing/packaging. You have eliminated cow by-products - milk - which
contain lactose, growth hormones and steroids. You have greatly increased your fiber thereby
insuring elimination.
Coffee
Yesterday - decaf mocha
Tomorrow - decaf mocha. Yes, I believe you need to keep a "woobie". Something in your
day that is small and wrong, but keeps you on track to eat right another day. If there is
something small in your daily routine that keeps you eating right at all other meals, by all means
keep it. That said, I don't believe in caffeine - it is dehydrating and void of nutritional value.
Lunch
Yesterday - chicken caesar salad. This is just a big mound of animal growth hormones, steroids,
preservatives (dressing), white flour (croutons), dairy (parmesan) and yuck.
Tomorrow - beans, hot sauce, pico de gallo, brown rice, gluten free chips, hummus, cucumber slices,
raw carrots, water, water, water
Snack
Yesterday - Coke zero, iced tea, cookie
Tomorrow - water, water, water, water
Dinner

So think again.
You might think you "eat healthy" because
- you eat chicken instead of beef
- you buy products that say "non fat", "organic", "healthy", "coke zero"
- you eat "whole grain" cereal and milk for breakfast
- you take vitamins
- you only drink 1-2 glasses of wine per night
Think again!
Define healthy as this: I eat in such a way that my digestive system is inundated
with enzyme rich foods which require no enzyme taxing on my liver or pancreas. I eat
in such a way as to alkalize my body, thereby reducing acidity. Eat in such a way that
your body eliminates - poops - twice a day.
Just take your current diet (not in the restrictive sense but diet as you currently
eat on a regular basis) and add vitamins and minerals. Your goal/success will be
measured in poop!
Breakfast
Yesterday - "natural" cereal and milk
Tomorrow - raw walnuts, organic raisins, wheat-free whole grain granola soaked in rice milk
for 15 minutes. This softens the raw walnuts. You have eliminated white flour typically found in
all cereal regardless of marketing/packaging. You have eliminated cow by-products - milk - which
contain lactose, growth hormones and steroids. You have greatly increased your fiber thereby
insuring elimination.
Coffee
Yesterday - decaf mocha
Tomorrow - decaf mocha. Yes, I believe you need to keep a "woobie". Something in your
day that is small and wrong, but keeps you on track to eat right another day. If there is
something small in your daily routine that keeps you eating right at all other meals, by all means
keep it. That said, I don't believe in caffeine - it is dehydrating and void of nutritional value.
Lunch
Yesterday - chicken caesar salad. This is just a big mound of animal growth hormones, steroids,
preservatives (dressing), white flour (croutons), dairy (parmesan) and yuck.
Tomorrow - beans, hot sauce, pico de gallo, brown rice, gluten free chips, hummus, cucumber slices,
raw carrots, water, water, water
Snack
Yesterday - Coke zero, iced tea, cookie
Tomorrow - water, water, water, water
Dinner

Beets - The best measure of metabolism
You can measure your metabolism with beets. This gets a bit graphic........ but here goes!
Eat a raw red beet - about 3 pinky-finger sized portions. It tastes best if you juice the beet pieces with 2 lbs of carrots and a huge cucumber - yum! Now wait. The next time you poop it should be red if you have great metabolism. In other words, if food is passing normally through your stomach and intestines with no detours or stoppages then the next poop should have beet juice (looks like blood but redder) in it.
What if you don't poop red till 3 days later? Eat more beets! Speed that system of yours up. And trust me....beets will do it!
Beets have a very unique nutrient profile. They contain betaine which is an even more potent antioxidant than polyphenols when it comes to lowering blood pressure. They also contain nitrates that work similarly to aspirin to prevent blood clots. 3 oz of beets contain almost 1 mg of iron.
Beets 101
Beets come in red, golden and black varieties. Choose a color. Remove the greens and trim the ends. Wash the beet vigorously. Wash the greens and use in salads. When using raw beet in salads most people prefer to remove the outer layer with a knife. If juicing beets there is no need to peel, just wash thoroughly and cut to fit the juicer.
Beet and Spinach Salad
1 cooked beet
3 Tblsp extra virgin olive oil
juice of 1 orange
fennel seeds
4 cups washed organic spinach
Cook beet in glass dish at 350 degrees for 1 hour. Peel and dice. Combine with orange juice, olive oil, fennel and salt and pepper. Serve over spinach.
Blood Juice
2 lbs carrots
3 pinky-finger sized pieces of raw beet
1 large cucumber
Juice all in juicer. Drink immediately. You may strain into your glass using a fine strainer in order to remove more fiber thereby speeding the nutrients to your bloodstream. Warning: your urine or poop may be red after consuming beets.

Rosemary
Rosemary is one of the easiest herbs to grow in Texas. Buy a rosemary "Christmas Tree" this season. Adorn on the front porch and then move it to the ground on the next warm day. Rosemary is prolific and will cover your garden! Fresh rosemary fights bacteria and can be used as a gargle during sore throat season. Rosemary extract is a better detoxifier for the liver than fresh.
Rosemary 101
Cut one twig at base near the dirt. Wash. To remove rosemary petals, rub stem between thumb and forefinger against the grain/growth. Rosemary petals can be finely chopped and added to almost anything. Use the twig as a skewer. Remember to use rosemary in arrangements or by itself in a vase with water. The aroma is healing!
Rosemary Shrimp Skewers
1 1/2 lb shrimp, peeled and deveined
3 cloves garlic, crushed
1/2 small can adobo chilis
1/4 cup extra virgin olive oil
rosemary twigs for skewers
Wash raw shrimp, peel and devein. Place in large glass covered dish with olive oil, adobo chilis and garlic. Refrigerate to marinade for 1 hour. Skewer onto rosemary twigs. Grill to desired temperature.

handful raw almond
extra virgin olive oil

Place all in small dish. Allow to soak. Eat almonds raw from dish as appetizer.
