Recipe: Baked Potatoes

It's one thing to know you need to eat right. It's another thing to actually do it.

I'll do a series of recipes using whole foods and whole food condiments including the best way to cook food to preserve the food's natural enzyme count. It's time to sell your microwave on Ebay! These foods are alkalizing to the body (as opposed to acidic). The goal is to resist our urges for sugar/fat/salt and yet satiate the appetite so that we re-train the taste buds and barrage our bodies with vitamins and minerals.

How about a baked potato for lunch?

"Vitamins and minerals are stored in, or just below,
the skin, so it is best to use potatoes unpeeled. New potatoes and special
salad potatoes need only be scrubbed. Potatoes are not in themselves fattening -
it is added ingredients such as cheese and the cooking method that can bump up
the calories. Steam rather than boil, and bake instead of frying to retain

Go to www.amazon.com and buy a "Charcoal Companion Potato Grilling Rack" for $6.95. It is a clever little piece of steel that spears 4 potatoes on a rack so the heat is evenly dispensed to the inner part. Place one very large washed russet potato or 2 small potatoes on the potato grilling rack. Cook on an outside gas grill at 300 degrees for one hour. Turn every 15 minutes. Don't let the outside burn because you are going to eat the skin. When soft, serve with extra virgin olive oil and a fresh sea salt grinder. Put as much olive oil and sea salt as you want. It keeps the potato smooth and salty; much better than the old way of constantly dressing the potato to keep it moist.

Eating the skin as well as the insides causes the meal to have maximum vitamin capacity and turns the meal from a simple carb into a whole vegetable. Your baked potato still provides its own digestive enzymes.

Alternative baking methods: buy already baked potatoes for about a buck at Central Market. Or you can use your crock pot: scrub potatoes, do not dry, place in crock pot on low all day (6 hours) and then turn to high for last 2 hours of cooking. Serve baked potatoes with a huge salad and it becomes a vegetarian dinner for the family!

Kids: Flu Prevention

The beauty of eating right and being conscious of what you put in your mouth is that you feel a better sense of control when flu season hits. Here is your arsenal to fight the fear of flu:

  • Never feed your kids sugar first thing in the morning. Ingesting as little as 1 tblsp of refined sugar stalls the immune system for 4 hours. Keep breakfast a whole food affair. Don't send them off to school with their immune system shut down due to a high sugar cereal breakfast.
  • Acidophiles. Supplement the good bacteria in your gut with a high grade acidophiles. Warning: the higher the bacteria count the worse the taste. Most kids acidophiles cut the taste with sugar. But getting good bacteria into their gut is what counts.
  • Perfect Food. Start every day with a 4-6 oz glass of Perfect Food, Barley Green or some other barley green product. This oxygenates your blood with live chlorophyll and boosts your immune system. Kids should have a shot once every 3 days.
  • Sleep. Take those phones out of their rooms. They cannot sleep from 9pm to 6:30am with a phone "charging" in their rooms. Don't worry about the grumpy looks - it's better than the flu!
  • Play Dates. There is nothing wrong with asking your kids and their play dates to wash their hands, eat a piece of fruit and drink a bottle of water while they are at your home. You're the Mom. If you are not the Mom, no one else is!
  • Cook Dinner. The more you eat out this flu season, the more you will be exposed to germs, preservatives, dead food and sugar/fat/salt. Let's face it, everyone looks at the menu and decides to treat themselves. Cook at home and focus on whole vegetables, brown rice and organic protein.
  • Buy new toothbrushes. Cheap way to get rid of a ghastly amount of germs.
  • Buy toothpaste. One per person. Watch how you apply toothpaste to your toothbrush. It probably touches the bristles. We can't have one tube of toothpaste touching every one's toothbrush.
  • Tea Tree Oil. If you feel congestion coming on, create a vapor barrier of tea tree oil by rubbing it in your ears, up your nose and on the back of your tongue. Tea tree oil is a natural antiseptic with strong antibacterial qualities.
  • Make water your drink of choice. If soda pop or Slurpees are a big part of your kid's lives, plan the treat for twice during the weekend. Let them decide the times so they feel a little control. Soda pop is instantly acidic to the system. All sick bodies are acidic. Water is alkalizing.

Obesity: Sugar/Fat/Salt

I had a friend who was obese: she described herself with that word so I feel free to say so. She loved soda pop. She worked for a soda pop company, Cadbury. She knew how to eat right but she also loved a "treat" at the end of the day and drank a 2 liter bottle of pop every night. The problem over 20 years was that one 2 liter bottle of pop became 3 two liter bottles plus a bag of miniature Snickers.

Sugar, fat and salt are addictive. They are added to all prepared foods, restaurant food, fast food, foods in a box or can and basically anything you buy pre-made. Sugar, fat and salt assure the food companies that you will eat the product quickly, buy the product again and hopefully, become addicted thereby assuring future profits.

formed much like a meat loaf, with binders added, which makes
those calories easy to swallow. Ingredients that hold moisture,
including autolyzed yeast extract, sodium phosphate, and soy protein
concentrate, further soften the food. I noticed that salt appeared eight
times on the label and that sweeteners were there five times, in the form of
corn-syrup solids, molasses, honey, brown sugar, and

So how do you break the addition to sugar/fat/salt? Plan to nourish your body with a plethora of vitamins and minerals every day.

Plan - Eat at specific times 5 times per day. You will increase your metabolism and eat less. What could be more fun than making yourself eat? Eat breakfast, fruit, lunch, fruit and dinner. Eat it for 30 days whether you like it or not.

Study Your Blood - Buy a blood type kit at Whole Foods. Buy "Eat Right For Your Bloodtype" by Dr. D'Adamo but skip the excessive animal flesh recommendations. Go to a doctor or chiropractor and ask for complete blood work analysis specifying where you have vitamin and mineral deficiencies. Buy the whole food that answers that deficiency. Eat it until you don't have the deficiency. Try this: drink carrot juice for 30 days in a row. The palms of your hands will turn orange. The Immune System Starts in Your Gut

How do I know if I have intestinal damage? This is the beautiful part. You can figure it out right now, using whole foods. Test your personal metabolism: drink carrot beet juice tomorrow morning. Time how long it takes to exit your body: your poop will be beet red. If it takes 12 hours, you probably do not have a highly permeable gut and you have a good metabolism. If it takes 3 days or longer, you have too much putrefaction going on in your intestinal walls and need a good cleaning; nothing a month on carrot/beet juice for breakfast every day won't take care of!

Kids: Herbs

I call myself the Witch Doctor. I do not believe in medicating children with over- the-counter drugs. I use herbs and foods to cut the underlying cause of the illness. Herbs work for my own kids because they eat good, clean, whole foods. When I activate my child's immune system and give the immune system the necessary nutrients to fight the illness, I am inoculating my child against future viruses of this strain. Children get sick to build their immune system. If you spend the illness masking the symptoms with drugs then you are a. sure to get the virus again and b. in a worse position nutritionally to fight it.

I'm pretty sure none of this will work if you wash it down with a Slurpee!! Here goes:

Acidophilus - Every day my kids take a supplement with their breakfast. I don't believe in gummy vitamins. I use Chewable Acidophilus by American Health. It is milk-free, vegetarian and supplies 115 mg of lactobacillus - the good bacteria that your gut needs to offset the bad bacteria contained in animal products and preservatives.

Perfect Food - Every other day I switch out the acidophilus for Perfect Food. They hate it - I don't care. Perfect Food is a barley green product which provides 100 raw dried vegetables and their necessary chlorophyll (for oxygenation). I only serve them 3-5 oz dissolved in water.

Tea Tree Oil - I love this product. It works for all upper respiratory. Tea tree is a natural antiseptic and bacterial killer. For sinus infections, colds and sore throats: put one drop on one clean finger and swab it across the back of your tongue, use a different clean finger and swab a drop in each ear, use yet another clean finger and put a drop up each nostril.

Throat Coat Tea - Made by Traditional Medicinals, my girls love a cup of hot tea in a beautiful tea cup even when they don't have a cold. Make sure they place their nose over the steam from the cup in between sips to maximize the benefit.

Potato Nap - Here's a crazy one! If your child has a sore throat, take an old panty hose, cut off the panty and the foot of one leg. Slice a raw potato and fan the slices out inside the panty hose. Tie the hose/potato around their neck and tie loosely before they take a nap or go to bed for the night. Potatoes absorb toxins through the skin. Never forget how permeable the epidermis is - not only can you medicate through the skin, you can pull toxins out through the skin.

and use as a pack over any congested part of the body. This type of pack
draws out static, toxic material, or venous congestion in any part of the
body. Use a narrow, thumb-shaped piece of potato to help correct

Foot Rub - Speaking pf permeable epidermis - before bed, if your child is sick, put Vicks, tea tree oil or garlic (Kyolic garlic is great but stains) all over your child's feet and put socks on them. This will open their sinuses through the night.

Head Massage - If your child has phlegm, mucous, congestion or even a sore throat, use a hand massager (the Brookstone type) on their head. This vibrates the scalp and encourages blood flow to the head. The increased blood flow will help break up the mucous.

Water - This is your number one medicine. No matter what the illness, your first move is to hand them a bottle of water and tell them to drink the entire thing. Then hand them some apple slices. Tell them that they will poop out the illness. When you give them the nutritional fuel to fight the disease and then stimulate the system with a mental suggestion to eliminate the disease, you are teaching your child how their body works.

Kids: What to Eat

When I became a celiac vegan, I did not involve my family. But 6 earaches later and with my husband's encouragement, I cleared out the house and started over with my menu planning.

Was it easy? Are you crazy!? Are we healthier 9 years later? You wouldn't believe how healthy! I got in trouble the other day from the pediatrician because my 12 year old had not been to the doctor in 6 years.

How did I do it? This is where parenting-style becomes crucial.
  1. I have control over the kitchen - you do not eat anything without my permission. We don't have the money for someone to eat a bag of tortilla chips and then not eat what has already been bought, cooked and planned for dinner. Which leads me to......
  2. I plan the whole week of meals on Saturday morning and then shop for a week's worth of breakfasts, a weeks worth of sack lunches and dinner for Sunday through Thursday.
  3. Water is our drink of choice. End of discussion.
  4. I love dishes, china patterns and unique serving pieces. When the girls were little we had "fruit princess". I would cut up 4 different kinds of raw fruit, put it in my favorite chine, invite them to the table with their favorite baby doll and serve them on fancy plates. Even though the kids are too old for it, I still believe in presentation. Light candles, set the table properly, allow them to add their own sea salt, freshly ground pepper, cinnamon, honey etc.
  5. No White Flour. I have already talked extensively about the multiple benefits of getting rid of flour. We eat rice linguini, rice spaghetti, Tinkyada rice lasagna, quinoa veggie curls, spelt bread, spelt tortillas, corn tortilla chips, rice cakes, potato chips, Fritos. We do not have wheat flour products at meal time.
  6. The kids eat organic beef, chicken, fish and eggs. We try to limit meat to one serving per day preferably at dinner so that it will be the high quality organic grass fed kind that I buy. Two nights a week are vegetarian: baked potato night, and omelets and tater tot night.
  7. No cow's milk. We use Vanilla Silk which as All Natural Evaporated Cane Juice but at least it is not a cow's milk product.
  8. Every meal starts with a raw fruit or vegetable. Dinner starts with a green salad with raw veggies or carrot sticks. Breakfast starts with 1/2 apple, one banana, a large slice of cantaloupe or a large thin slice of watermelon.
  9. The kids carry lunch to school 4 days a week. Their lunch bag contains chips, a spelt sandwich with almond butter, a clementine or bag of grapes, 2 wheat-free cookies and a bottle of water.

Eat the rainbow. Teach them to feed their bodies, their minds, their energy and even their souls. Teach them delayed gratification; dessert is for birthdays. Create joyful occasions that are not centered on food: trade treat times for $5 trips to CVS. You will be repaid with healthy, happy, even tempered, intelligent children who don't get every virus that goes through the school.

DeTox: Lotions and Potions

Your skin, the epidermis, is your largest organ. And never forget that it is an organ. A porous, living, breathing, nutrient absorbing and nutrient starved organ. Be careful what you feed your skin; your skin is permeable and what you put on your skin is absorbed into the bloodstream.

People are aware of the health risks of pollution. But there is very little we can do today about the air we breath - changing the composition of the air we breath will be a long, slow process which will probably involve everything from personal choice to politics. But the more immediate health risk is in ignoring all the many ways you apply toxins to your skin on a daily basis.

Pollution enters your skin through chemicals, pesticides and heavy metals. We expose our skin to shampoo, deodorant, hair spray, shaving cream, toothpaste, cosmetics, office supplies, bedding and water without applying the nutritional logic: would I put that in my mouth?

Shower water is heavily chlorinated; shampoo contains chemical dyes; cosmetics contain isopropyl alcohol; dental amalgams contain mercury; cotton mattresses are laced with pesticides and fire retardants that can cause toxicity in the nervous system. What to do?

  • Water - A hydrated system allows your body to flush toxins. There is no such thing as a pure environment. You wouldn't want a pure environment even if one was possible: our gut is an intelligently conceived battle of good bacteria and bad bacteria with the good bacteria posed to win if we aid the war nutritionally. A hydrated system also allows for a more active electric current making the brain quicker and the cells more active in communicating with one another. Here's the formula: Take your weight (120), divide it in half (60), convert it to ounces (60 oz.), drink that much distilled water per day (60 oz. Smart Water). Iced tea, coffee, carrot juice or any other liquid are DISQUALLIFIED. I mean it!

  • Olive Oil - As often as possible, use pure vegetable oils on your skin. It is very difficult to find even an organic body lotion that does not contain dyes and chemicals. Extra virgin olive oil works just as well and serves an important dual purpose in that it nourishes the body as it is absorbed into the skin. Try it and see. Experiment with coconut oil, almond oil and walnut oil.
  • Tea Tree Oil - The melaleuca tree (most often found in Australia) provides an oil that is 100% natural and highly antibiotic. Use shampoos and conditioners that are made from a tea tree oil base. One side benefit to those with elementary age children: lice hate tea tree oil due to its antiseptic properties. My children made it through elementary school without one case of lice. Also use it with colds: place a drop in each ear, a drop on the tongue and a drop up each nostril to create a vapor barrier to fight congestion and sinus infections.
  • Food - Remember that ingesting whole foods will flush toxins fastest. The more vegetables, fruit and brown rice you eat, the better your digestion system will remove the pollutants.

Participate In Your Own Healing

I have suggested that cancer be treated as an outside invader to the body - a parasite if you will. This is considered an alternative medicine approach. Traditional medicine regards cancer as a deficiency in the immune system, an auto-immune disease or a mutation of your cells. These are highly disparate views. It would be very difficult to walk into a doctor's office and spout alternative medicine theories and get any support.

But I urge you: no matter what the illness - participate in your own healing.

Read - I have read 100 books on health, nutrition, healing, tea, food-combining, cancer, children's herbs, Mediterranean cooking, raw food juicing, water, prayer and laughter. I have listed a few of the most all encompassing and important books but there are so many more.

Study - Listen to your body as you read. Decide which theories and therapies are a good fit for you.

Pray - Illness is overdetermined. Overdetemined means there is not simply one cause for the disease: a person may smoke for 40 years and never get lung cancer; another person may smoke for 10 years and suffer a terrible death from lung cancer. There will always be emotional and spiritual reasons why people get sick. Read Anatomy of the Spirit by Carolyn Myss.

Cook - Come on! What could be more fun than buying a new cookbook? Try anything by Nathalia Graimes, she writes beautifully about the source of the raw whole food and then provides a recipe. Look at Marilyn Diamond's classic, The American Vegetarian.

Think - Figure it out for yourself given your own individual past, your own individual eating habits and your own individual ability to discipline yourself and heal yourself. What does the data mean to you individually?

Heal - Find a doctor who humbly considers himself a teacher, a consultant and even a healer. But inform him that you will eat only a raw vegan/celiac diet for the next 30 days (if not forever). Tell him your friends are praying for your health and give him the ingredients for Essiac tea. Cautious pessimism on his part is OK - arrogant rebuttal of a whole food life-style is not.

Sleep - The body is miraculously self-healing given half a chance.

A Cancer Theory: The Cure

So let's assume cancer is a parasite. The parasite, while a repulsive concept, is actually a natural part of eating and life. As a matter of fact, the body typically rids itself of dozens of little creatures by pooping. Parasites are contained in animal flesh and animal by-products. Therefore, eat fewer animal products and suffer fewer intestinal parasites. Also, take care to constantly rid your body of parasites, detritus, old unused food-stuffs and disease by pooping often.

And what about the immune system? It is set up for just this type of job. Your intestine houses both good and bad bacteria. They are in a very balanced constant warfare. The immune system monitors the fight to make sure the good guys win.

But here's the problem:

What if you have not been paying attention to your health? What if you are just now finding out about nutrition, the immune system, pH balance and digestive enzymes? What if you are in the middle of a burger and fries and you find out you have cancer?

Here is my proposal:

Traditional medicine is known for doling out drugs and pharmaceuticals to mask symptoms. If the symptoms of an illness are a sore throat and runny nose, we have drugs which will alleviate the pain of the sore throat and stop your nose from running. A Cancer Theory: Sugar

To summarize: I felt lousy 9 years ago. I've read 100 books on everything from nutrition to tea, cancer to food-combining, herbs to laughter. The books I found most helpful have been written by medical doctors, Ph D's, preachers, supermodels and naturopathic doctors. I have used my body as a chemistry experiment. I have found that healing occurs when I eat whole foods prepared to enhance their enzyme content and alkalizing properties. It has been a wild ride but one that has resulted in giving me a lean, healthy, highly energetic body. Not bad for a 49 year old.


As I continue to read, I have stumbled on a most fascinating formula. While the wide gamut of books I have used research varying topics from organic face creams to leukemia, the majority seem to point to a cure for cancer.

I am not a doctor; I have a degree in accounting. But may I purpose this theory?

Cancer is an outside invader. For purposes of this discussion we will call it a parasite. The parasite lives in animal flesh including meat and dairy. Even after being cooked, the parasite can continue to live. Cancer feeds off protein, sugar and dairy. It grows according to the amount of meat, preservatives, sugar and dairy that the host consumes. IF the host starved the parasite by discontinuing that diet, and IF the host oxygenated the host system, the parasite would cease to live. Then the immune system would flush the cancer (as it does several times in a lifetime) and the host would be well.

What's For Breakfast?

Now that you are re-thinking what you put into your body - what's for breakfast?

The best breakfast would be raw fruit or raw vegetables juiced. Raw fruits and vegetables rush valuable vitamins and minerals into your bloodstream, push your personal pH into alkalinity and energize. They also serve one more extremely valuable purpose: your body cleanses itself while sleeping. Your body pushes food through it's miraculous filters, the gall bladder, pancreas and kidneys, and stores it in the large intestine and colon for elimination. If you keep your body on that cleansing tract in the morning by eating only that which encourages quick exit, you will be pushing detritus, calories, fat and illness out of your body faster.

That said, here are some ideas for breakfast. Sometimes your day requires something a little heavier than juice to get you through the morning. Children need a wholesome amount of vitamins and protein before school (but NOT sugar - more on that later). Husbands sometimes want a cooked food option.

Breakfast

  • Organic Corn Flakes with Vanilla Rice Dream
  • Yogurt and raw granola

  • Pineapple juice and homemade wheat-free raw granola
  • Gluten-free cookies with 1/4 cantaloupe

  • Spelt toast dipped in maple syrup and organic peanut butter

What's For Dinner?

  • Now that you are only putting foods in your body which give it health, boost the immune system, energize, alkalize and push out the waste quickly - what's for dinner?

    Here are some dinner ideas. The intention is for you to buy whole food ingredients and create these meals at home. Some, if not all, of the ingredients can be purchased pre-packaged. But remember, prepared foods add preservatives to your diet. Preservatives linger in the digestive tract. The greatest source of preservatives are meat, wheat and dairy.

    One more thing. You are probably cooking for a family including a man and children, all of whom may be adverse to becoming celiac vegans purely for health reasons. My solution has been to make these meals and add a small portion of organic and/or kosher meat to the meal for their servings. For instance, on spaghetti night I serve deBoles rice linguini in olive oil and garlic salt. The kids put meat spaghetti sauce over it. Everyone eats a raw veggie salad.

    Dinner
  • Nachos (corn tortilla chips, black beans, lettuce, diced tomato, guacamole and salsa).
  • Pinto beans, cole slaw and potato salad.
  • White beans and rice pasta
  • Garlic sweet potato mash
  • Zen vegetable stew and roasted asparagus
  • Nori rolls with Bragg's Liquid Aminos
  • Long grain brown rice with aioli sauce and steamed veggies
  • Sauteed kale and onions with walnut sauce
  • Oven roasted cauliflower with garlic and rice fettucine
  • Tostados with salsa, beans and guacamole
  • Soy cheese quessadillas with creamy jalapeno dip

Eating Out: No Meat/Wheat/Dairy

So now that you are a wheat-free vegan, where do you eat out? What do you order in a restaurant? Try these:

Whole Foods
  • Salad Bar - The salad bar at Whole Foods has a fabulous (albeit expensive) selection of raw veggies. This is a great place to experiment with new foods: beets, kale, edamame, kidney beans and raw cabbage slaw.
  • Be sure to avoid the salad dressings and mix your own: extra-virgin olive oil, balsamic or apple cider vinegar, sea salt or Bragg's Liquid Aminos.
  • In the prepared foods cold case you can get sushi rolls, guacamole, fresh pico de gallo, hummus and decaffeinated iced tea.
  • Just beware, you can also get a beer, a chicken sandwich and a bag of chips - just because it's Whole Foods doesn't mean everything they serve is a whole food!

Cafe Express

  • As with most restaurants, look at the "side" items first.

...but I don't wanna be a wheat-free vegan!

Long Grain Brown Rice

Buy a food steamer with a rice basket from Target. It will cost you about $29.99. Or use a Bed, Bath and Beyond coupon and buy one there. Follow the directions which will basically be: fill the bottom pot with water up to the water line. Place the solid rice basket inside the hole-y vegetable steamer.

Put 2 cups of long grain brown rice (#6678 in the bin aisle at Whole Foods) and 2 cups distilled water in the rice basket. Put timer on 60 minutes. Turn on. Walk away.

Voila! Whole grain brown rice to be eaten with Bragg's liquid aminos for an Asian taste or with sauteed veggies in olive oil.

Dairy: The Glue that Keeps You Sick

I've suggested cutting meat from your diet in order to alkalize your body and push your pH into a healthy range to boost your immune system. For obvious reasons, it is never a good idea to ingest preservatives or chemically altered foods. But dairy including butter, milk, cheese, sour cream, ricotta, mayonnaise, whipped cream and yogurt is the glue that keeps you sick.

Bread: The Ugly Truth about Preservatives

We will define preservatives as non-food substances such as refined salt, refined sugar, white flour, dyes and chemicals that are frequently added to foods. Prepared foods, restaurant food, canned foods, boxed and packaged foods and bottled or canned drinks contain preservatives. Even restaurant lettuce is sprayed with a preservative for shelf life. I won't belabor the point: these are not living foods and should not be ingested for any reason. They cause chemical build-up in your body which will exhibit itself eventually as allergies, cancer, auto-immune disease or just basic inflammation.

But there is one preservative that is particularly difficult to remove from your diet - wheat.

The whole grain kernel of wheat consists of 3 parts: the outer Bran which contains B vitamins, fiber and minerals; the Germ which is a small nucleus containing rich anti-oxidants, vitamin E and B; and the inner core called Endosperm which is the large carbohydrate containing protein. In white and wheat flour products the whole grain kernels are husked of their Germ and Bran and contain only the starch portion of the kernel. The resulting flour is mixed with sugar, salt, oil, yeast and any other combination of things and cooked.

The following is a ridiculously small list of the vast number of foods that contain flour: pasta, bread, pancakes, sandwich bread, croutons, cookies, cakes, pastry crust, flour tortillas, pizza crust and bagels. These foods and all their cousins are possibly the greatest sources of fat and, ironically, malnutrition in the Standard American Diet. As you can tell, it is almost impossible to eat breakfast, lunch or dinner in a restaurant and avoid bread/flour.

You may say, "Oh, but I eat only high fiber sandwich bread and whole wheat pasta." Take a look at the package. Ask yourself, did this product come from "amber waves of grain"? Is this a whole food? Or is it a stripped down carbohydrate mixed with sugar, salt and fat that has been cooked until soft that becomes a dead lump in my gut?

Due to lax packaging and advertising laws, many white flour products can proclaim to be "100% whole grain". Learn to read ingredients: the highest volume ingredient is listed first, the second highest volume ingredient second and so on.

it is so high in gluten, and because most people use too much of it. The
average American diet is 29% wheat - mostly refined wheat products, low in food

Bad News: Meat

The good news is fruit, vegetables, whole grains, bean and legumes are a wealth of digestive enzymes and are highly alkaline to the body. You can eat as much as you want!!

The bad news is cooked meat is highly acidic to the body. If you are ill and want to nutritionally heal yourself, you must refrain from ingesting highly acidic foods.

Let's define meat as beef, pork, game, chicken, poultry, fish and eggs. In other words, animal flesh. If Americans were offered animal meat that had been bled and drained and gutted properly we might be able to justify meat as a protein source. Some forms of organic kosher meat can be nutritious when eaten on rare occasion. But American ranchers are forced to use antibiotics and pesticides in ridiculous numbers. Cows are fed corn; cow stomachs cannot digest corn as they are natural herbivores. The result is disease in these animals which necessitates antibiotics.

If the animal is fed antibiotics, growth hormones and non-nutritional preservative-laden chow, then you are ingesting the same.

Therefore, in order to heal yourself you must use vegan protein sources such as cooked beans, raw nuts, cooked legumes and certain whole food soy products such as miso and liquid aminos. Those that argue that protein levels will fall dangerously low on a vegan diet know nothing about protein and the cause of protein deficiencies. Both cancer and heart disease exist in excess protein conditions. People who lead a vegan lifestyle, moreover, countries with a vegetarian background suffer cancer rates at half of those in the U.S.A.

I have a friend who had terrible TMJ - the teeth grinding condition which can keep you up all night. He is a meat-eating man in his 40's. He went to the dentist for a night retainer; he tried night-time sleeping aids and even asked the dentist to pull what he felt was the offending tooth. All to no avail. I warily suggested that he just try to go 3 days without meat. I suggested he eat crackers, cheese, vegetables, bananas, eggs, tortillas, soup etc but NO MEAT FOR 3 DAYS.

He called me on Tuesday, day 3. He said, "I hate to tell you this.........I slept through the night with absolutely no pain."

Just try it for 3 days. Be a vegan for 3 days. Meat binds muscle and is acidic to your body. What if you felt better? What if you slept like a baby? What if your body was allowed to alkalize itself and better your health?

How I Got Started: A Personal Experiment

Breakfast. I decided to start with breakfast. If I could change my bagel/decaf routine and start off the day with something high in enzyme content which would alkalize my body, what would it be?

So I bought a $99.99 juicer from Bed Bath & Beyond and shoved 1 pound of carrots and an apple through it. (The recipe for what I lovingly now refer to as "weenie juice" is at the bottom of the blog.) It was good. I went to work and had a huge bottle of water. In fact, as the morning went along I felt just fine, wide awake, clean and light. I was a little hungry but definitely felt good.

After reading Recipes for Life by Rhonda Malkmus, I decided to add other vegetables to my morning juice. I had always been borderline anemic and beets are considered a whole food source of iron but I have never been a beet lover. So I added one whole cucumber to 1 pound of carrots before putting two small finger sized portions of red beet into the juice. I couldn't believe it - not only was it good but it was incredibly sweet. My mother (age 70) calls it beet sugar and says they used to use beet sugar instead of sugar cane to cut cost.

I highly recommend Carrot/Beet/Cucumber juice for another reason: you can measure your metabolism with it. I will try to put this delicately. The juice comes out of not only the juicer a deep red color, but also exits your body the same color. If you drink or eat beets you can measure your metabolism by noticing how many hours or days it takes for it to exit your body - you'll know by the color. Same day exit, good metabolism. 3 day exit, need to drink more beets!

And that's how it began: my experiment with nutritional information and whole food cooking which became my own nutritional healing.

Here are my favorite condiments for use in juicing, cooking and steaming vegetables, grains, beans and legumes. They make eating to FEED MY BODY a burst of flavor as well as energy.

Extra Virgin Olive Oil - "extra virgin" is not a reference to the olive's morals. It's the olive way of saying raw.
Bragg's Apple Cider Vinegar - or any organic vinegar with "the mother"
Bragg's Liquid Aminos - pure protein! A remarkable product that can be used anywhere you need salt or soy sauce taste.
Flax Seed Oil
Grade B Maple Syrup - my kids use it on toast, cereal, anyplace they want the taste of sugar
Raw local honey - once again, a hit with the kids.
Raw almond butter
Raw nuts including pinenuts, walnuts and pecans
Raw seeds including pumpkin seeds and poppy
Balsamic Vinegar
Raw minced garlic in water
White pepper, cayenne
Sea Salt, kelp
