It is a clever little piece of steel that spears 4 potatoes on a rack so the heat is evenly dispensed to the inner part. Place one very large washed russet potato or 2 small potatoes on the potato grilling rack. Cook on an outside gas grill at 300 degrees for one hour. Turn every 15 minutes. Don't let the outside burn because you are going to eat the skin. When soft, serve with extra virgin olive oil and a fresh sea salt grinder. Put as much olive oil and sea salt as you want. It keeps the potato smooth and salty; much better than the old way of constantly dressing the potato to keep it moist.
